SCOTCH-EGG RECIPE


SCOTCH EGG
You know I wish that scotch was scotch as in 'Malt Whisky'....lol, but nevermind it's something much better. Scotch egg is one of my best snack, it is easy to make and doesn't take much time and energy at all.. It contains hard-boiled eggs, covered in flour, sausage, eggs and crumbs.. Scotch-eggs are quite expensive in the eateries and restaurants..so I'd encourage you to try the recipe out and make one for yourself. All the best :)

Ingredients

5 eggs
Sausage meat (250g)
1 tsp thyme
1 tbsp curry (not important) 
1 chopped spring onion
Salt
1 tbsp ground pepper (dry pepper)
Plain flour (125g)
Breadcrumbs (125g)
Vegetable Oil; for frying

Preparing the Scotch Egg

·         Season the plain flour with salt and the ground black pepper; you may use the red pepper as an alternative
·         Beat one egg and place the remaining four eggs in a pot of cold water with salt in it over high heat boiling it for 5minutes and over low heat for 5minutes; (10minutes in total)
·         Pour out the hot boiling water and run cold water on the eggs, and peel
·         Mix the sausage meat with the thyme, curry and spring onion in a bowl and season with ground black pepper and salt and share the mix into five portions and keep them on the baking board
·         Put flour mix into a bowl plate, then cover each boiled egg with a coating of the flour
·         Cover each coated egg with the sausage meat and dip each of them in the beaten egg and then place in the breadcrumbs, rolling it to ensure its completely coated in the crumbs
·         Heat the vegetable oil in a deep pan (maybe a Wok), until it is hot.
·         Gently place the scotch egg into the hot oil, then deep-fry for 10 minutes, until it golden and crisp and the sausage meat is completely cooked.
·         Carefully remove the scotch egg from the oil using a spoon and place them on a kitchen paper.
·         And your scotch egg is ready to be served.

LOCUST BEANS STEW

This is an unusual but very tasty stew especially with yam. The locust beans present in the ingredients is the only thing that has altered it from being the usual stew. If you haven't tried this out, you should. It is popularly known by the Yoruba's from the western part of Nigeria. It is eaten mostly with rice and is really yummy as the stew is very deeply fried that you cannot for once feel the sour tomato taste at all. I've got a thing for locust beans. Hence, that's why I'm sharing this post. Please feel free to remove the locust beans from your list of ingredients if you just want the usual deeply fried assorted stew.
