How to - Homemade Pie Dough

Ingredients Plain flour 500g Margarine 200g (Commonly Stork) or any butter 1 teaspoon baking powder About a cup of water One whisked egg Preparing the Dough: Add flour, 1 tsp of baking powder and a pinch of salt in a bowl. Mix well, then add the margarine and mix again till the mixture looks like bread crumbs. Then begin adding water little by little gently mixing the dough. Knead the dough well for about 10 minutes or more until your dough is smooth and elastic. Then let it rest for 7 minutes. Sprinkle floor on a baking surface or floured table and place the dough on it. Then, roll out the dough using a rolling pin, making sure that the dough is firm but neither too flat nor too thick (same consistency as in the picture above. Your dough is ready to be cut.

There is just one thing I love about Nigerian buns and that is the hard texture and how filling it is. Ingredients 200 g flour 2 tablespoons sugar 1 teaspoon baking powder 1/2 teaspoon salt   50ml milk Warm water to mix Vegetable Oil for frying Preparing the Buns - Put the flour, baking powder, egg, sugar, salt and milk together in a bowl and mix with warm water thoroughly until its fully mixed. Place a plastic cover over the bowl and leave for 30 minutes. Then mold the dough into round balls. -  Heat up enough vegetable oil in a very deep pan or pot until you feel the oil has become medium hot. Ensure that the oil is not too hot else the buns might cook outside but not inside. Place some of the molded balls in the oil. An all time snack for several people all over the world. Ranging from the Europeans to the West Africans and most especially Nigerians :))) Some Call it Kebab, Others Fajitas and even, SHAWARMA. Ingredients Tortilla Wraps or Shawarma Bread 2 Boneless Chicken Breasts/ Beef (Thinly Cut) 1 Small Cabbage (Thinly cut) 2 Large Carrots (Grated) 3 small Tomatoes (Thinly Cut) Onion (Thinly Cut) Cucumber (Thinly Cut) Mayo Ketchup Salt 2 tsp minced onions 2 tsp minced garlic 1 tsp thyme 1 Knorr stock cube 1 tsp chilli pepper 1 tbsp olive oil Preparing the Shawarma Wash the veggies and set aside Add the marinade to the cut chicken or beef and place in the fridge overnight. Ingredients 2 tsp yeast ½ tsp ground nutmeg Sugar (100g) ¼ tsp salt Plain Flour (250g) Warm water for mixing Vegetable Oil for deep frying Preparing the Puff-Puff ·          Place the flour in a bowl, then add sugar, salt, yeast, nutmeg and mix together. If your yeast is not powdered, mix it in lukewarm water and leave for 3-5mins then wait for the next step ·          Add warm water in bits to the ingredients above to make the puff-puff rise, till it is fully mixed. You may now add the yeast mix and keep mixing. Avoid getting the mix watery ·          Place foil paper or a plastic cover over the bowl and ensure that it is well covered (Be generous with the use of foil; ensure no room for air is left). Fish roll is almost same as meat pie, chicken pie and all other pies infact. The only difference is its filling; Fish. Ingredients ½ tsp salt ¼ tsp nutmeg ¼ tsp yeast ¼ tsp curry powder ½ medium chopped onion 2 tbsp sugar Plain flour (250g) Unsalted Butter (125g) Cold water 1 egg Vegetable oil for deep frying Sardines for the filling Preparing the Fish Roll ·          Take the sardines from the tin and place in a deep pan under high heat, and then add the curry and onions for about 10 minutes.
