Mediterranean Inspired Lamb Chops

Ingredients 2 tbsp chopped fresh mint 1 tsp finely chopped fresh rosemary 3 garlic cloves 2 tbsp olive oil 4 lean lamb chops or cutlets 1 aubergine, sliced 4 courgettes, sliced 2 red peppers, cut into large chunks 2 yellow peppers, cut into large chunks 85g/3oz feta cheese, crumbled 250g/9oz cherry tomatoes Cooking Instructions -  Preheat your oven to 180C - With a blender, blend together the ginger, rosemary and garlic, mix with one tbsp of olive oil. Coat lamb chops with the mixture  - Place the carrot, potatoes on a parchment/foil paper. Cover with some olive oil and arrange the lamb chops over. Put into the oven to bake for 25 minutes. - Take out tray from oven and add the cherry tomatoes, broccolis and cauliflowers. Place back in the oven to bake for another 10 minutes, until the lamb chops are thoroughly cooked.

Seafood Boil with Prawns, Sausages and Corn on the Cob

Boiled Corn and Coconut

Ingredients: Corn on the Cob Salt Butter Black Pepper Coconut Cooking Instructions: 1. Place a pot of water to boil on medium-low heat. Add in some salt. 2. Then, add in the corn and cook for 6 minutes.  3. Drain water out of the corn and transfer to a plate. 4. Can be paired with some pieces of coconut as in the picture OR drizzle some melted butter on the corn and follow up with some black pepper.

Seasoned Butter Cauliflower Rice with Egg, Bacon and Spinach

Ingredients Butter Bacon lardons 2 garlic Cauliflower rice Paprika powder Salt Bouillon cubes Pepper Chicken broth (you can substitute for veg broth) Lime juice (1/4) Spinach 2/3 eggs Cooking Instructions: 1. Melt some BUTTER in a medium non-stick frying pan and fry off the BACON LARDONS for about 6 - 8 mins. 2. Add about 2 GARLIC cloves in and stir for about 30 seconds 3. Add the CAULIFLOWER RICE (I grated mine, but you can rough blend it) 4. Then add some PAPRIKA powder, SALT or BOUILLON cubes and some PEPPER; cook for 2 mins (or until tender) while stirring to prevent burning. 5. Add a little CHICKEN BROTH ( you can substitute for veg broth), squeeze in some LIME juice (1/4). Then, add the SPINACH, and keep stirring until wilted and until all of the water has cooked off. 6. Make a hole at the centre of the mix and crack in 2/3 EGGS; stir into the mix, until the egg is cooked. 7. Remove from hob. Taste and adjust seasoning, if needed.

Griled Peppered Spicy Tilapia Fish

Before and after...this simple and tasty GRILLED TILAPIA FISH  Total time: 30 - 40 mins (excluding prep time) Ingredients: 1 tsp ground black pepper 1 tsp garlic powder, depending on fish size 1 tsp paprika 1 tsp all purpose seasoning 1 tsp dry basil 1/2 tsp ginger powder (optional) 1 Knorr Chicken Cube 1/4 of an onion bulb roughly blended with 1 scotch bonnet pepper Cooking Instructions: 1. Descale and clean the fish - then soak it in a bowl of salt and cold water with one squeezed lemon in it for about 15-20mins. After, drain the water 2. Preheat the oven to 180 degrees celsius  3. Mix spices together in a bowl - Combine all spices including the pepper mix together using two tablespoons of olive or vegetable oil 4. Make two cuts diagonally across both sides of the fish  5. Honey, Ginger & Lemon Cough Mixture

Okay so the mixture of these three ingredients above is the only solution I know to my cough, sore throat and even catarrh. As odd as it may sound, I am certain that in some parts of the world it is being used for these same purposes. The bacteria fighting characteristic of honey, the purifying characteristic of lemon and the healing characteristic of ginger makes this possible. So here is what you do when you have got any of the above mentioned conditions: Simply squeeze one lemon into a cup. Peel a ginger root using a peeler or knife and chop into tiny pieces. Then, either you grate the ginger into very tiny pieces using a grater or you crush the ginger by wrapping it in a foil paper and using a wooden rolling pin to pound hard on it (this should work well). You will then add the crushed ginger into the squeezed lemon and add three full tablespoons of honey and mix thoroughly. Chin-Chin goes to school...Hahahaha!!! A very popular crunchy snack in West Africa, used to entertain visitors, taken by students to school, sold almost everywhere; Chin-Chin is known for it's rich taste and is enjoyed by many. The recipe below gives an easy break down of how to make plain chin-chin. Never underestimate the wonders that a cup of Warm Lemon juice water every morning performs. It aids digestion by flushing out unwanted materials and toxins from the body. Avocados'

Avocados are very nutritious and contain monounsaturated fats (MUFA’s), fibers, potassium and some vitamins. Avocados are said to contain around 160 calories, 3 grams of protein, 12 grams of carbohydrate and about 21.5 grams of fat with the majority of carbohydrates in form of fibers. You can eat them in moderation as part of a weight-loss diet or add them to your regular diet as a concentrated source of calories to help you gain weight. While Avocados contain relative high calories, the Oleic acid contained in the MUFA’s can help to reduce one’s cravings for food and is used by the body as an energy burner, instead of the saturated fat you must have assumed it was.
