This is an unusual but very tasty stew especially with yam. The locust beans present in the ingredients is the only thing that has altered it from being the usual stew. If you haven't tried this out, you should. It is popularly known by the Yoruba's from the western part of Nigeria. It is eaten mostly with rice and is really yummy as the stew is very deeply fried that you cannot for once feel the sour tomato taste at all. I've got a thing for locust beans. Hence, that's why I'm sharing this post. Please feel free to remove the locust beans from your list of ingredients if you just want the usual deeply fried assorted stew. Thanks for looking
Ingredients
3 cans of Plum Tomatoes or 1kg of tomatoes.

Blend the peppers, tomatoes and the onions together using a blender (for a Locust beans stew, add the locust beans and blend together). On the other hand, empty the contents of the tomato puree into a plate and mix with warm water until slightly thick.
Then, wash the meat/assorted meat and put it in a pot of water (the amount that can be enough to cook the meat. Add knorr cube, curry, thyme and salt to taste. Cover and cook until tender.
After the meat must have been well cooked, you may either fry it or put it in the oven at 170̊C for about 30-40 minutes depending on how fast your oven is (Just know it has been well grilled when the meat turns brown). Set the meat stock aside i.e. the water used in cooking the meat.

Add the blended tomato mixture into a pot on medium heat. Leave to boil until the mix becomes thick with the water dried up.
Heat up vegetable oil in a pot. Then, add the boiled tomatoes and the tomato puree mix then stir. Stir at intervals while it cooks for about 20-25 minutes (the stirring is to make sure that the mix doesn’t get burnt). You may then add the meat stock and leave to cook for about 5 minutes again.
Now, add the fried or grilled meat and the knorr cube. Add salt to taste. Cover it and leave to simmer for about 5 minutes.
And your Locust beans stew is ready to be served with rice, boiled yam or even boiled or fried plantain x.
