OKAZI/AFANG SOUP

Okazi soup native to people from the Eastern parts of Nigeria, particularly people from Rivers State of Nigeria and also known as Afang soup by the Efik people in Nigeria is a very delicious delicacy made of leaves. Ingredients Cut Okazi/Afang leaves 500g Chopped Water Leaves 350g 3 tbsp Crayfish Dry Fish Beef, Ponmo, Cowleg Knorr Cubes 7oz Palm oil Preparing the Okazi soup ·         Grind the Okazi leaves in a blender with a small quantity of water and then afterwards, grind the crayfish and pepper . ·         Boil the beef, Ponmo and cowleg with the knorr cubes and onions; adding a small amount of water. Avocados'

Avocados are very nutritious and contain monounsaturated fats (MUFA’s), fibers, potassium and some vitamins. Spaghetti Garnished with Mackerel Fish and Vegetables

Ingredients Stock Fish, Dry Fish Ponmo (Cow skin) Beef, Shaki (cow tripe), Liver Crayfish Salt, Knorr Cubes, Scotch Bonnet Peppers Onions Chopped spinach Vegetable Oil/Red Palm Oil Preparing the Sauce ·          Blend or grind together, the pepper, onions and crayfish ·          Place the shaki in a pot and be sure to have added salt, knorr and onions. ·          Soak the stock fish and dry fish in water for an hour to soften while you rinse the spinach. Ingredients 2 tsp yeast ½ tsp ground nutmeg Sugar (100g) ¼ tsp salt Plain Flour (250g) Warm water for mixing Vegetable Oil for deep frying Preparing the Puff-Puff ·          Place the flour in a bowl, then add sugar, salt, yeast, nutmeg and mix together. If your yeast is not powdered, mix it in lukewarm water and leave for 3-5mins then wait for the next step ·          Add warm water in bits to the ingredients above to make the puff-puff rise, till it is fully mixed. You may now add the yeast mix and keep mixing.
